MARINATED FETA CHEESE

Don’t you hate when you open a package of feta, use a little bit, put the rest on a container and next time you take it out is to put it in the bin because it has gone off? It used to happen a bit too often in my house to the point when I stopped buying feta cheese. But feta cheese is amazing in so many things that we  missed it terribly so I had to come up with a different solution.

Marinating the feta will not only make the cheese last longer, but it will also infuse with amazing flavors that will in time improve your salads, frittatas… anything where the cheese goes.

No more waste – just delicious food

Ingredients

200 grs feta cheese
2 garlic cloves
1 bay leave
1 teaspoon peppercorns
1/2 teaspoon coriander seeds
olive oil

Directions

Carefully cut the cheese into cubes.
Put feta in a jar with a top and add the rest of the ingredients to the jar.
Pour enough olive oil to cover cubes of cheese.
Let marinate in refrigerator for 2 weeks for an amazing taste but if you can’t wait, overnight will do.

You could also use sun-dried tomatoes, rosemary, thyme or capers for the marinade. Chop and change. It will never be boring.

Serve it topping your favorite salads or simply on fresh bread. Simple and delicious, what real food should be.

WEEKLY INSPIRATION : VALENTINE’S DAY

We are already in February and Valentine’s Day is just around the corner! Are you a Valentine kind of person?

Mr B and I never celebrated it until we had the boys and they became aware of the day. We are just not very romantic. Now  we have a “family date”, exchange cards and have breakfast in bed, all together. It’s lovely. The boys call it Love Day, and for us, that is exactly what it is.

Whichever way you celebrate, on your own, with your partner, in family, with friends… t is always nice to have some inspiration for the day.

DISPLAY YOUR PHOTOS IN A BIG WAY ON A SMALL BUDGET

I love having photos of the family around the house. They are everywhere. In the kitchen, the hall, the bedrooms, the sitting room…

Photos are memories. Of course, we have all those memories stored somewhere at the back of our head but we are often too busy to be able to access them. Photos remind us of those memories, those silly moments, the family moments, different places, the fun we had on holidays, how the kids were so small at one point…  As cheesy as it sounds (and it is going to sound cheesy) photos warm my heart.

For the sitting room, I knew I wanted to make a statement display with loads of photos. I was really inspired by Ashley’s one from TheHandMadeHome  but it had to be smaller as my sitting room is not as big (or bright, or lovely, or have her couch, or…) as hers.

I had to think outside the box.

One day, I was walking around a furniture shop dreaming of a new kitchen when the light bulb when on!!! I could get a kitchen door glass cabinet as a frame! (like this one, or this one). It is always worth checking out the second-hand kitchen shops for these kind of items. As well as having second-hand kitchen furniture they also tend to buy the remains of stock from big companies or builders so you can get brand new kitchen counters, fab sinks and other bits and pieces for half the price. It is in my local shop that I found my one for only €10!! I think I danced in the shop!!

I wanted square photos but not too small so I decided to print the photos in 8×6 and cut them to fit the frame. I then cut a large piece of cardboard to fit in the frame and I attached the photos to it. Once everything is ready, fit it in and secure it at the back with some tape.

The kids love looking at the photos, trying to remember when they were that small, listening to us telling them stories about the photos or making up their own one. It’s so sweet.

It is very personal, you made it yourself and for little money – that is officially categorized under Win/Win/Win… Totally!!!

MAKE YOUR OWN PERSONALIZED SIGN

Once upon a time, we had some very crappy table nests in the house. They were bought when we were very young, foolish (somethings never change) and we didn’t have much money. We needed little tables around the house so the nest was bought.

The years passed by and the tables survived few moves and many different uses before the legs broke. Despite having no emotional attachment whatsoever to these not-so-nice set of tables, I decided to keep the top of 2 of the tables as they were made of solid wood and I knew (ok, I thought? I hoped!)  they could be up-cycled at some stage and become a whole new product.  6 years later, I feel vindicated.
Make your own personalised sign - OrganisingChaosBlog.comI always liked old signs. Whenever I see an old sign in a second-hand shop I have to stop myself from buying it because, as much as I like old signs, I don’t want a sign that says nothing about my family in my house. I feel like I need to have some sort of personal connection with it, something that reminds us of something but as that was looking very hard to find, I decided to make one myself.

I knew exactly where I wanted to place it : crowning the gallery wall (does it sound posh or what!?!).

I wanted the sign to feel like an extension of the gallery wall but a tad bit different. Same but different, very clear, right?
Make your own personalised sign - OrganisingChaosBlog.comFor the “same” part, I decided to paint the background of the sign, aka the top of my table, with the same colors as my gallery wall: grey and white. I painted the stripes with Autentico Chalk Paint (Soft Grey and Casa Blanca) and then I distressed it by sanding it with fine grit sandpaper to make it feel old. Lastly, I gave it a coat of clear wax to seal the paint and to make it smoother. I love it!

I got the 4 because there are 4 of us and the letter B because all our surnames start with B. It doesn’t get any more personal and simple than that, right?

I  also painted the letters with Chalk Paint. First with the grey and then some pink (Antique Rose) so when I distressed the edges by lightly sanding them you can see the grey underneath ever so slightly. To give it a more romantic tone, I added some floral washi tape to the letters. That’s just me, a romantic at heart…

It was a tough decision though… 4B or B4… I ended up going for 4B thus avoiding having to explain that the sign did not say “before”… which of course was going to happen…

I totally love the contrast between the rough grey and white background, and the vintagy (totally a word!!) and romantic feel of the letters.

So there it is, my very own, personalized, hand-made and full of meaning sign.
How easy was that? very!

MAKE A PLAIN BLANKET CUTER WITH POMPOMS

It looks like I was a good girl last year because Santa brought me good few presents and it looks like Santa knows me quite well because one of the presents I got a blanket and I LOVE blankets.

As everyone knows, the world is divided between blanket people and not blanket people. Since I was a child, I have always been a blanket person, I was always the one sitting on the couch with a blanket, summer or winter, I always had my blanket with me on the couch.
Make a plain blanket super cute with pompomsI don’t know if it is the heat they provide or just the comfort, but I love being wrapped up in a blanket while watching a film sitting on the couch. And if you get me a chilli hot chocolate, I’ll be your best friend forever!

The blanket I got this Christmas is super comfortable, a Footsie Blanket, it has little “pockets” to slide your feet in so they are nice and cosy and never become uncovered. I love it so much!

RECIPE: BREADED CAMEMBERT SALAD WITH CRANBERRY SAUCE

If you like cheese, you are in for a treat.
Fried camembert salad with cranberry sauce - delish
This recipe makes the loveliest starter for a dinner party. It is nice, it is tasty and it is light – all the things you want in a starter. Camembert is a delicious creamy cheese in its own right and by coating it with breadcrumbs and frying it, you get a lovely crusty outside and a soft and creamy inside… just yum!

To make a starter for 4 people, you will need:
4 people (ha! I know, I am hilarious!)
1 big  cake of Camembert cheese cut into wedges
1 beaten egg
breadcrumbs
For the sauce:
190 g Jar of cranberry sauce
Zest and juice of ½ orange
Approximately 1 pint or 500ml of vegetable oil, heated to 180C in a heavy bottomed pan.

How to:
Cut the Camembert cheese into wedges. Dip each piece into a bowl with the beaten egg and straight onto to the bread crumbs making sure they are all coated evenly. Let them rest and chill in the fridge for 30 minutes
To make the sauce, mix the cranberry sauce, orange juice and zest in a bowl. You can have the sauce warm by warming it slightly in a saucepan while frying the cheese but cold is also works a treat.

Heat the vegetable oil to 180C and deep fry the Camembert for 1-2 minutes or until golden brown, crisp and delicious. Remove it and place it in a plate with some kitchen paper to absorb the excess oil.

Serve the breaded cheese with the sauce and a side leafy salad dressed with a light vinaigrette.

This is the kind of starter that you can prepare in advance and just fry as your guests are just sitting at the table.  You’re guest will love it. And if the don’t, they don’t deserve to be your friends… get better ones, you totally deserve it… I am only joking… not really

CHOOSING A COLOUR SCHEME FOR MY GALLERY WALL

I have been working on putting together a gallery wall for my stairs.Choosing a color scheme - grey, coral, white and blue

I guess that when planning a gallery wall, the main considerations are the frames and the prints, or at least they were for me. I had good few frames lying around. They were different styles and sizes, which is good, but also different colors, which is not so good for me. I like the idea of totally different frames in some gallery walls but not for this one. I was looking for some bit of uniformity.

Deciding on what color to use in the frames has been the biggest delay in getting this infamous gallery wall started. I might have mentioned before that I am a bit anal complicated when it comes to colors. I knew I didn’t want anything dark. I wanted to keep the stairs light and airy so I needed a light color. I also knew I wanted something neutral enough so the frames would not clash or take away from the prints.

After much deliberation (first world problem, right?), I decided to paint the frames light grey with Autentico Chalk Paint and complement the grey with some coral and light blue decorations and prints. I love the grey, coral, white and blue combination. It is light and fresh, calm and uplifting.

I have used chalk paint before (here, here and here) and you have probably figured out that I pretty much love it. There is no need for sanding and it covers any surface with very little effort, perfect! I decided to leave some frames grey, to lightly distress others and to mix the grey with some white in others to keep it lively and playful. A bit of variety within the uniformity. I like that.

I now have to plan how I am going to organize the frames on the wall. I like the random factor with some sort of order. You know what I mean, don’t you? I am hoping to share the final wall very soon.

When it comes to interior design, I have always been a fan of the Scandinavian style. I love the whites, the greys, the soft colors, the textures… Scandinavian interior design is renowned for its simplicity, utility and beauty, and that is exactly what I want in my home – simple clean lines that allow a space to work for a busy family with young kids but it is still beautiful.
One of the main features of the Scandinavian style is the light colors. I guess it is to maximize any bit of light that they get in the winter months and, having lived in Ireland for 15 years and experiencing the dark (and wet, and cold) winters, I need plenty of light colors around the house to help me make it to Spring.

Last year I bought a plain inexpensive white rug for the sitting room. It was a bit of a characterless rug but I bought it with the idea of maybe painting some design in it or dying it. A year passed by and the white rug was still under the sitting room table. Still white. Still plain.

As much as I love white, I also like colors. A touch of color always lifts a space, adds a touch of fun and it makes any space more summery even in the depths of winter. If that touch of color comes in the shape of colorful gorgeous felt balls, well, that just divine!!! So what do you do when you have a white rug and a load of colourful felt balls? The only thing you can do!

I love the subtle color that the balls bring to the room and I love how the rug makes the wood on the floor and on the table that bit brighter.
