I am not a cake person.
I will always be far more tempted by some cheese as dessert than with a sweet treat. Mr B is like me so we are that couple that always forgets the dessert when we have people over. We are all about the starters and main courses.

Since we’ve had kids, we have realised that IT IS NOT ACCEPTABLE to celebrate certain events without cake. Kids seem to have an extra chromosome that determines that a celebration is not a celebration without a cake. The cake chromosome affects people differently depending on their genetic background and some people even lose it when the reach maturity but, in others, it only gets stronger.

As yesterday we celebrated Mr B’s birthday and Sunday is Big Monkey’s birthday too, I have been and will be making cakes. OK, let’s call spade spade. I am ASSEMBLING cakes.

My “regular” cakes are those that involve some melting at most and some assembly. But that doesn’t mean that they are boring or look terrible. Oh no! they are cool! and it’s not me saying that. All the under 10 kids are saying. Cool, I’ll tell you.

Ingredients for an ice-cream bombICE-CREAM BOMB

2/3 chocolate Swiss-rolls
1 kg of vanilla ice-cream
2-3 bags of Maltesers
Medium size see-through bowl

Get the ice-cream out of the freezer for at least 10 minutes before you are ready to assemble the cake. We need the ice-cream to be smooth and manageable.
Cover the inside of the bowl with cling-film. This will help to get it out of the bowl later on without any drama.

Cut the Swiss-rolls into 1 cm slices and start covering the inside of the bowl with it. Starting from the middle and working your way out in rows. Squeeze the Swiss-roll slices into the gaps, , make sure not to leave big gaps between the slices.

Once the inside of the bowl has been covered, fill half of the semi-circle with the vanilla ice-cream, add a layer of Maltesers and finish it off with another layer of ice-cream.Cover the bowl and put in the freezer.

Take it 10 minutes before you are ready to sing ‘Happy Birthday’ and flip it onto a plate. The cling film should help you peel it off the bowl with ease. Watch the little faces light with delight as they find the Maltesers hidden in the ice-cream.

If the boys are going to a birthday party where I know they are going to eat junk food (sausages, chips, pizza, sweets, cakes… the usual), I always give them a big smoothie with as much fruit, organic yoghurt and honey beforehand to make sure that they have something nutritious and full of vitamins to balance the meals out. It is the same for us. If I am planning a night out or to get a take-out, I would make myself a smoothie before for a guilt free enjoyment later on.

This healthy CHOCO RASPBERRY SMOOTHIE feels a bit naughty because it has chocolate. It is of course dark chocolate (70% coco). Dark chocolate is full of antioxidants, it is very nutritious and it may improve brain function. It is also he healthiest and most delicious chocolate in the entire world.
– 1 cup Almond Milk
– 1/4 cup Dark Chocolate
– 1/2 cup Fresh Raspberries
– 1/2 cup fresh Strawberries
– 1 tbspn Honey

I love cooking. Baking, not to much. It might be to do with the fact that I am not a dessert person. I like the idea of cupcakes, cakes and so on, but we never really eat them at home and they go to waste, so I tend not to bake.

This Christmas. my cousin got me this book : Mug Cakes. It is ideal for someone like me. It is quick, it is not messy (always a plus) and it makes a perfect amount to treat the boys to a special dessert, or even make one for the grown-ups!

The last couple of days it got really cold and it snowed last night. There was still some snow on the ground yesterday morning so the boys got to play with it before going to school, but I knew it would all be gone by the time they came back so I wanted to make them a treat to make up for it. Crazy mummy logic.
Chocolate brownie in a mug
To make a Chocolate Brownie in a mug you will need, besides a mug and a microwave, is:
2 tablespoons soft butter
2 tablespoons caster sugar
1 tablespoons light soft brown sugar
1 tablespoon cocoa powder
1 medium egg yolk
1/2 teaspoon vanilla extract
4 tablespoons self-raising flour
pinch of salt
2 tablespoons chocolate chips

How To
Place the butter in a mug and microwave for 10-20 seconds until melted.
Add the caster sugar, brown sugar and cocoa powder and beat with a fork until it is very well combined.
Add the egg yolk and vanilla and beat together. Add the flour and salt and beat again until thoroughly combined and smooth. Stir through half chocolate chips and transfer to a mug.
Cook in the microwave for 50 seconds @ 600W, 30 seconds @ 800W or 25 seconds @ 1000W.
Scatter the remaining chocolate chips over the top and cook in the microwave for a further 30 seconds.
Leave it to cool, for about 15 minutes, if you can that is. The cake will be then ready to eat.

The boys loved it and it really make them happy despite all the snow being gone. They inhaled it! And they really appreciated it all the more as I never make them dessert treats. I was the best mother EVER!
