Summer = Salads.

High temperatures require fresh food and, although temperatures never get too hot here, at least not for me, salads are always welcome in my house (remember these salads: 1, 2, 3?)

This is a quick and easy one. It only requires 3 ingredients and it works wonderfully alongside a main course or as a starter.

Slice the cooked beetroot into thin slices and place them around the plate and fill the middle with the chopped cherry tomatoes.

Salt and pepper both the beetroot and the tomatoes.

Dress the salad with some extra virgin olive oil and I like to add some balsamic vinegar to the beetroot. I usually don’t add vinegar to the tomatoes as I like them just with salt and olive oil (I’m such a purist!:-)) but feel free to add some vinegar to the tomatoes as well.

Break the feta cheese into small crumbs and sprinkle them over the plate. Don’t go too crazy with the feta as otherwise the salad would be too salty.

I like finishing the salad with some fresh oregano sprinkled on top.

If you don’t have any fresh oregano, basil would also work wonderfully.

This is definitely one of my go-to salads. I love that it is very easy to prepare and I always have the ingredients in the fridge (as beetroot and tomatoes are in my top 10 most-loved-foods)
The beetroot makes it very wholesome but it is still very light and fresh.
